Decadent Chocolate Nice Cream

With Valentine’s Day coming up, there’s no better time to shower the people you love with some chocolate! I’ve been wanting to make nice cream for a while.

For the uninitiated, nice cream is blended frozen bananas that create a dessert akin to ice cream—but since it’s basically fruit, you could eat it for breakfast or a fun snack! In other words, dairy-free ice cream. It’s true that bananas already hold a lot of flavor, but they also are a great base for creating a chocolate ice cream.

Here I’m sharing a FAST and super EASY recipe for decadent chocolate nice cream. I mean, it is literally going to take five minutes of your life to make. This nice cream is naturally sweetened with bananas and dates, and chocolatized (is that a word?!) with cacao powder. I topped mine with strawberries because they looked really great at the grocery store, but you could also try raspberries, cherries, or even pomegranate seeds. I do love the contrast in color among the chocolate, berries and shredded coconut and highly suggest you do something similar when serving to your friends or family (or yourself)- remember we eat with our eyes first!

Decadent Chocolate Nice Cream

Makes 1-2 servings


Ingredients

For the Nice Cream

  • 3 large bananas, cut up into pieces and frozen

  • 1/4 cup cacao powder

  • 1 tablespoon almond butter

  • 1 medjool date (pitted)

  • 1 teaspoon real vanilla extract

  • 1/4 cup plant milk (plus more as needed)

Toppings

  • 1/2- 3/4 cups sliced strawberries (or other red berries)

  • 2 tablespoons shredded coconut, unsweetened

  • 1 tablespoon cacao nibs

*Ingredient notes: for a nut-free version, omit the almond powder. If you don’t have cacao powder on hand, use regular unsweetened cocoa powder.

Directions

Place all the ingredients for the nice cream into a high speed blender. Start on the lowest setting and gradually make your way up to high, until your nice cream is completely blended and has a creamy, smooth texture. Add additional plant milk as needed, but try not to add too much, in order to keep the nice cream as solid (dense) as possible. If you have a Vitamix or other kind of blender with a tamper, you’re going to want to use that.

Spoon the nice cream into your serving vessel(s)- I recommend a small, shallow bowl but you could also use a parfait glass. Top with your choice of berries, shredded coconut, cacao nibs, and anything else your beautiful heart desires!

Serve for dessert, or prepare this for your loved ones for breakfast on Valentine’s Day!
